CRANBERRY PINEAPPLE MINIS

This is the easiest recipe to make for a crowd.  It travels well and is inexpensive and quick to make. 

ingredients

  • 1 can (20 oz.) crushed pineapple in juice, undrained
  • 2 pkg. raspberry gelatin
  • 1 can (16oz.) whole cranberry sauce
  • 2/3 cup pecans or walnuts
  • 1 apple, chopped
  1. Drain pineapple, reserving juice.  Add water to juice to measure 2 1/2 cups, pour into a saucepan and bring to a boil.
  2. Once water is boiling, add gelatin mixes and stir until completely dissolved.  Remove from heat.
  3. Add pineapple, cranberry sauce, nuts and apples. 
  4. You can either pour mixture into 24 paper-lined muffin cups or into 13×9 inch pan.  (the muffin cups are too cute) :o)
  5. Place dish in refrigerator 2 1/2 hours or until set.  Serve chilled!
