CRANBERRY PINEAPPLE MINIS
This is the easiest recipe to make for a crowd. It travels well and is inexpensive and quick to make.
ingredients
- 1 can (20 oz.) crushed pineapple in juice, undrained
- 2 pkg. raspberry gelatin
- 1 can (16oz.) whole cranberry sauce
- 2/3 cup pecans or walnuts
- 1 apple, chopped
- Drain pineapple, reserving juice. Add water to juice to measure 2 1/2 cups, pour into a saucepan and bring to a boil.
- Once water is boiling, add gelatin mixes and stir until completely dissolved. Remove from heat.
- Add pineapple, cranberry sauce, nuts and apples.
- You can either pour mixture into 24 paper-lined muffin cups or into 13×9 inch pan. (the muffin cups are too cute) :o)
- Place dish in refrigerator 2 1/2 hours or until set. Serve chilled!
