Cold breakfast cereal

 

Cereal is the perfect staple for all moms. You can serve it up at any meal. Adding milk provides protein, and if you buy right, the cereal will also be fortified with vitamins and contain fiber! Seriously, who doesn’t love the convenience that a bowl of cereal provides. It’s better than heavily salted, soaked in grease, potatoes- at least, we hope they are still potatoes.

But right now cereal is not my friend. Why? An entire box covers my floor as my soon to be 4 yr. old tries not to crush it under his little toes. (I don’t think he’s trying hard enough.)

SIGH… do you think the 5 second rule applies here?

TONIGHT: CEREAL PANCAKES

Whip up this recipe for a yummy and good for your tummy meal.

2 cups Flour
2 1/2 teaspoons of baking powder
1/2 teaspoon of salt
1 tablespoon of sugar (optional)
1 egg
1 1/2 cups of milk
1 teaspoon vanilla (optional)
2 tablespoons of butter (melted)

1. Combine dry ingredients. (flour, baking powder, salt, sugar)
2. In separate bowl combine wet ingredients. (milk, eggs, vanilla)
3. Add wet ingredients to dry ingredients. Mix well.
4. Cook over medium heat.

Adding extra milk to the batter creates thinner pancakes.

Try using organic flour, or go half wheat/ half white. 

I use a teaspoon of melted butter in the pan to cook each pancake. Yes, it may not be the healthiest, but it sure tastes yummy!

Want a great excuse to reuse those plastic butter tubs or coffee containers? (Green) Follow this recipe for Gandma’s Organic Oatmeal Chocolate Chip Delux Cookies! Make up the cookie dough, and store it in one of those containers. Bake as you go. The dough will be good for 5-7 days in your frig. Who doesn’t love fresh baked cookies!

 

 

INGREDIENTS

1  1/2 cups all-purpose organic flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup (2 sticks) butter or margarine, softened

1  cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

3 cups old fashioned oats, uncooked

1 bag chocolate chips

 

DIRECTIONS

1. Preheat oven to 350 degrees F. 

2. Combine flour, baking soda, salt in a bowl.

3. In a separate bowl combine butter, sugar, egg, and vanilla.

4. Add the dry ingredients (flour, baking soda, etc.) to the wet ingredients (butter, egg, etc.).

5. Mix in the oats. Mix in the chocolate chips. Place spoonfuls of dough on an ungreased cookie sheet and bake for 10-12 minutes.

6. Bake what you want to eat now, and store the remaining dough in a reused plastic tub in the refrigerator.

We all know it’s here. How many of you are already cooking breakfast on the sidewalk? 

Well, to lighten up and chill us out, we devised a list of ten must-haves for all MommyWho MOMS. Curious to know what made the list?  Check out Beautify for more details. Let us know if we missed something! 

And to start off, here’s a concotion that will get you in the spirit for summer fun…

Lemony Orange Cooler Punch

Lemony Orange Cooler Punch

Prep Time:5 min      Total Time:  5 min          Makes: 20 servings, 1 cup each
  • COUNTRY TIME Lemonade Flavor Drink Mix
  • 1 qt.  (4 cups) cold orange juice
  • 1-1/2 qt. (6 cups) cold water
  • 1 bottle  (28 fl. oz.) ginger ale, chilled
  • 1 qt. (4 cups) orange sherbet
  • 1 pt.  (2 cups) strawberries, sliced

MEASURE drink mix into cap to 2-quart line. Place drink mix, orange juice and water in large plastic or glass pitcher. Stir until drink mix is dissolved. REFRIGERATE until ready to serve.

POUR orange juice mixture into large punch bowl when ready to serve. Stir in ginger ale. Top with small scoops of sherbet and the strawberries.

I love to cook, but there are just some days that I dread the thought of defrosting, microwaving, baking, or cutting something up. Last night was one of those nights. You see I am a little behind on my meal prep for this week. I have to stay a week ahead of you guys, so I didn’t have anything prepared for last nights supper. I flipped through a magazine, got an idea and surprisingly had the ingredients in my cupboard! I always turn on the radio when I am cooking, seems to make the time pass a bit quicker. Of course I have my little one with me, usually in her seat watching me scramble to get things together. As I was making the Fish Cakes (look for this recipe next week) my little piglet was getting a bit restless. I quickly finished mixing the ingredients and popped the bowl into the refrigerator to chill for 10 minutes (wish I had 10 minutes to chill)! With 10 minutes to spare I picked up my squirmy worm, just itching to be released from her seat, cranked up the radio and began to dance with her. She loves music and loves watching mommy act silly. For pointers on how to do this dance click on the video below….HA! You wish I had a video…not going to happen! And so there we were, dancing and laughing, in the middle of the kitchen. Who said cooking wasn’t fun? Take 10 minutes to dance with your little ones today!

Speaking of the kitchen, how are things going for you? I was a little behind in the organizing so I caught up last night. I got some dividers for my drawers and began cleaning them out. It is amazing all the things I found that I never use. (I was also surprised to find so much expired medicine…keep tabs on this for sure!) From the drawers I moved on to my cabinets and food storage. It really only took about 45 minutes and I got rid of enough stuff to clean off one shelf completely! What is on the agenda for today? The microwave and oven! That’s right, you have been putting it off but that burnt cheese has to get scrubbed off the oven sometime…today might as well be the day. Look for a more detailed list on our Organize page. After you clean a little bit (which is so therapeutic) turn on some fun music for you and your little ones and dance the morning away!
